Chardonnay, Pinot Noir and Seyval Blanc come together to form what is considered by many, including famed wine writer and critic Oz Clarke, as 'Britain's best value sparkler.' The grapes are fermented separately and spent twelve months in tank on the gross lees. They lots are then assembled and bottled where secondary fermentation carries out and the wine rests on the lees in bottle for an additional eighteen months. After disgorgement, 10 grams of dosage is added to counter the ripping acidity.

The nose abounds with fresh orchard fruits and pithy grapefruit. There is an underlying spice of white pepper and fresh herbs over a slice of lemon pound cake. The palate is aggressive with high toned notes of green apple and grapefruit moving with extended notes of ripe pears and gooseberries. The finish is not massive but it is persistent with a peppery, herbal tone carrying throughout.
