Mick has a love for all things fresh and light, when it comes to wine. In Stellenbosch, Cinaut produces varietal wines that are light in color and low in tannin, often displaying bright cherries, earth and spice. After looking for the right Cinsaut vineyard for quite some time, and with the help of a dear friend, he finally discovered a special site up on the Bottelary Hills.

Unlike Mick's usual red winemaking style, the Cinsaut grapes are destemmed before fermentation due to the natural low acidity compared to Pinot Noir and Syrah. Whole-bunch fermentation tends to reduce acidity. Gentle pumpovers or punch downs are performed 1-2 times a day throughout fermentation, and the wine is pressed to 500L barrels for maturation. He wanted to highlight the brighter characters of Cinsaut by bottling earlier than his other red wines. The wine is bottled unfined and unfiltered, with nothing added during the winemaking process apart from a dash of sulphur.

It’s lively and fresh with juicy raspberry and cherry fruit on the palate.

Craven Wines is a winemaking collaboration between husband-and-wife team Mick and Jeanine Craven. After travelling across the world together for four years and learning about wines in Australia... Learn More »
