Rockstar Pinot Noir. Winemaker Francois Haasbroek’s surname may translate in Afrikaans as “rabbit pants”, but his Pinot Noir is no laughing matter. Serious stuff, crafted using grapes sourced from three young sites in the über-trendy Elgin area, fermented roughly one-third whole bunch and spending three weeks on skins. It is aged in seasoned oak, unfiltered and ridiculously rare as he made less than 2,000 bottles. This is such a rockstar Pinot Noir that if you left it on its own in a hotel room, you’d come back to find it in bed with six Chardonnays, the TV out the window, the sprinklers going off and an empty minibar.

Francois Haasbroek says: “I personally enjoy wines built on natural acidity & grape tannin, not plastered under layers of oak with countless additions and manipulations forced upon it.” He destems 70% of the grapes and cold soaks for 5 days, with 3 weeks of fermentation before pressing. 30% of grapes underwent whole cluster fermentation. The wine is aged in 225l French oak barrels for 18 months. He bottled unfined and unfiltered.

The 2015 vintage of the 'Terra Lux' is riper and grittier than the previous versions. It is still tight and nervy, but a bit more forgiving in its youth. One could say this is the 'broodiest' expression of the wine - full of angst and darkness. Give it time, however, and its hard shell will begin to soften.

Blackwater Wine is the brainchild of Francois Haasbroek, a man that is unequivocally part of the bright future of South African wine. Francois completed his schooling in Stellenbosch, surrounded by vineyards, mountains and food.  After enrolling at Stellenbosch University and graduating with a bachelor's degree in science – viticulture and oenology, he did his first stint as a 'cellar rat' at Neil Ellis wines in 2002, 2003 and 2004.
