This wine is named loosely after Sergio Hermann, a Dutch 3 Michelin star Chef. His documentary, ‘Fucking Brilliant’, follows the last few months of his restaurant before he shuts it down. Serge's goal is to spend more time with his family.

The 2017 'Serge' GSM is a mixture of 2 vineyards from the McLaren Vale sub-region of Whites Valley. The Grenache and Syrah are from the block next to Luke and Caleigh's place and the Mataro is sourced from about a kilometer down the road. The Grenache vines were planted in the 50’s, and the Syrah and Mataro vines are 20+ years old.

Prior to fermentation, the Mataro and Grenache were de-stemmed and separated. The Syrah was fermented 50% whole bunch. Per usual, Luke and Caleigh prefer the use of wild yeast, and hand plunge on skins for a few weeks before basket pressing. The Mataro is aged in 6-7 year old hogsheads, the Grenache and Syrah are aged in 10-12 year old barriques. The juice is kept on full lees until racking to bottle. No fining or filtering with minimal SO2 additions before bottling.
