Sauvignon Blanc
Southern Valleys

Auntsfield Estate aims to produce a distinctive style of Sauvignon Blanc, defined by a riper flavor spectrum and textural palate (both derived from the rich clay soils of the vineyard) with an underlying minerality. 2013 was characterized by naturally low yields and warm settled weather with very little rainfall. Autumn produced cool and settled conditions which were some of the best seen in many years. This resulted in exceptionally clean fruit at optimal ripeness. Cool ferments with cultured yeast in stainless steel tanks was utilized to retain the fresh varietal aromatics. This was balanced by a portion of the fruit subjected to traditional winemaking practices; handpicked, whole bunch pressed and fermented in seasoned oak barrels, adding texture and length to the wine.

It has an appealing grapefruit and white peach nose with a lilting undercurrent of fresh herbs and elderflower. Medium-bodied with a great intensity of flavor that nicely straddles the line between fruit and vegetal characters, it has a lively backbone of acid and a good, long finish.
